Caldo Verde

Caldo Verde is a Portuguese dish that features chorizo sausage, kale, and potato. This hearty soup goes great with all sorts of bread. Although you can try this recipe out for all sorts of occasions, it is best to enjoy during times when it’s cold outside.

Story behind this dish

I read about this recipe for the first time during a flight years back. If I ever decide to read the on-flight magazine during the flight, it is a sign of despair since I have nothing better to do. This happens all the time no matter how prepared I thought I was before boarding the airplane — iPad out of power, Kindle accidentally left in the backpack sitting in the overhead cabin… Anyways, finding this recipe was possibly one of the best in-flight decision I ever made, since I have been feeding myself and many others over the years with this dish.

Ingredients

  • 1 lb green kale, stem removed, finely chopped
  • 8 oz chorizo sausage
  • 3 tbsp olive oil
  • 1 onion small dice
  • 3 roasted garlic cloves, pureed
  • 2 lb baking potatoes peeled dices
  • 1 qt chicken stock
  • 1 qt water
  • salt and pepper
  • optional: cilantro or mint

Direction

  1. heat oil in pot and cook the sausage; remove sausage
  2. add onions to oil and stir until colored
  3. add garlic to onions and stir
  4. add water chicken stock and potatoes to pot simmer
  5. mash potatoes in the pot add additional stock
  6. add sausage and kale cook another 10 min
  7. add salt and pepper
  8. optional: finish with cilantro/mint on top
